Baker's doozy

Been a while since I've baked, so I decided to make some cupcakes tonight in honor of a co-worker's birthday. Lately I've been baking from scratch, but I was feeling tired and instead found a recipe for red velvet using a cake mix and a few added ingredients (sour cream, chocolate pudding mix, etc.). Easy enough, I thought. Boy, was I wrong.

I followed the recipe, but after I pulled them out of the oven, the tops sunk in like a bad souffle. I ate one and the tops were still raw. I threw them back in the oven for a few minutes. When I took them out, the tops were a bit crispier, but the rest seemed mushy. So I decided to throw them away. I can't bring crap like that into work for others to politely take and then throw away after they've taken a bite and discovered that it's horrific.

I started over with another cake mix I had, just as is, no other added ingredients. I made the cream cheese frosting from scratch. Much, much better this time:
